Given the different ripening times of the various varieties, one of the biggest challenges during harvesting is knowing how to choose the right time to pick, taking into account the different soils and varieties, in order to get the most out of a ripening process that is not uniform.
Collected one by one
Olives are harvested when the fruit is at its peak, which usually occurs between October and January, depending on the weather conditions for that year. In Belvís de las Navas, we choose to harvest olives by hand, without machinery or additional technology. The entire harvest is carried out using traditional methods and with the utmost care to avoid damaging the olives and preserve their maximum quality.
